Ingredients

  • 1 lb. mushrooms
  • 2 c. veggie stock
  • 2 c. milk
  • 2 tbsp. butter or olive oil
  • ¼ c. white wine or any other cooking wine
  • 1 medium yellow onion, finely chopped
  • 2 tbsp. flour
  • 2 tbsp. soy sauce
  • 2 tbsp. lemon juice
  • 1 tbsp. paprika
  • Salt and pepper to taste
  • Garlic powder to taste

Instructions

  1. Clean the mushrooms carefully (we can use a damp cloth or put them in a bowl with water and dry them after removing the dirt). Chop the mushrooms into medium-sized pieces.
  2. Add the two tablespoons of butter to a soup pot and bring it to heat until it melts.
  3. Chop the onions and add to the melted butter. Cook the chopped onions until soft and translucent (it takes about five minutes at medium heat).
  4. Add the chopped mushrooms, white wine, and paprika. Stir and let the mixture cook for about five more minutes (keep stirring frequently).
  5. Add the broth and the soy sauce to the mixture. Put the lid on the pot and let the mixture simmer for at least 10 minutes without boiling (lift the lid occasionally and turn the heat down a bit if it starts to boil).
  6. Add two tablespoons of flour with two cups of milk to a separate saucepan whisk constantly and simmer to create a roux. The mixture should bubble and turn a golden brown.
  7. After the mixture simmers for 10 minutes, slowly add the flour and milk mixture to thicken the soup. Let the soup cook for another minute, stirring constantly.
  8. Once thick, remove the soup from heat, add the lemon juice, and stir.
  9. Taste the soup and adjust the salt and pepper if necessary.
